Sunday Salmon Launches Wednesday Wheels to Deliver No-Cost Organic, Allergen-Sensitive Meals Across Douglas County, CO

CASTLE ROCK, CO, May 27, 2026 /24-7PressRelease/ — Sunday Salmon is proud to announce the soft launch of Wednesday Wheels, a new no-cost community meal-delivery initiative designed to support neighbors across Douglas County facing food insecurity, transportation barriers, medical hardship, or financial instability.

Beginning Wednesday, May 27th, 2026, Wednesday Wheels will provide bulk delivery of individually packaged meals to residents at two income-restricted age 55+ senior apartment complexes, Auburn Ridge and The Meadowmark, adult residents with intellectual and development disabilities at Unity on Park, and long-stay residents at the Rockview Hotel, as part of its initial rollout phase.

This soft launch model will continue through the week of July 8, when Sunday Salmon plans to officially launch a full public ordering platform available to anyone in Castle Rock facing food insecurity, with future expansion to all of Douglas County, subject to funding and volunteer delivery drivers.

Once fully launched in early July, community members will be able to place meal orders online for Wednesday pickup at the Sunday Salmon restaurant between 4:00 p.m. and 6:00 p.m. Meals will also be delivered directly to individuals and families who are unable to travel for pickup due to age, disability, transportation limitations, medical conditions, or other barriers.

Wednesday Wheels was created in response to a growing, yet often unseen, need in Castle Rock and greater Douglas County.

While Douglas County is frequently recognized as one of the wealthiest counties in Colorado, food insecurity continues to impact thousands of residents. According to Feeding America data, approximately 19,600 people in Douglas County are food insecure. Castle Rock alone is home to an estimated 4,000 local neighbors who are quietly struggling to consistently access nutritious meals.

The need is especially significant among seniors. Approximately 13% of Douglas County residents are age 65 or older, representing more than 46,000 seniors countywide. Many are living on fixed incomes while navigating rising housing, healthcare, and grocery costs.

“Our community has incredible generosity, but there are still people here who are hurting in silence,” said Mary Grothe, Founder and CEO of Sunday Salmon. “Wednesday Wheels exists to bridge the gap between people who need help and a community that genuinely wants to care for its neighbors. Sometimes the biggest barrier is simply getting food to someone’s front door.”

Meals served through Wednesday Wheels will reflect the same standards Sunday Salmon is known for: no-cost organic, gluten-free, seed-oil-free, chef-prepared meals made with dignity and care, and no eligibility requirements to receive them.

The launch of Wednesday Wheels was made possible by the support of local organizations, grant partners, and individuals who chose to invest directly in their neighbors’ well-being.

$10,000 from Black Hills Energy
$3,000 from Ent Credit Union (becoming Wings Credit Union)
$2,500 from CORE Electric Cooperative
$1,000 Town of Castle Rock Town Council

Roughly 175 meals will be delivered weekly during the soft-launch phase, with a goal of increasing weekly meals to over 200 once the new online ordering system launches in early July.
